The black organic PDO Nyons olive is a mature olive, picked by hand, with an electric rake or with a vibrator and then calibrated according to its diameter for the table olive.

 They are then put in Brine (with salt) in order to remove all its bitterness and reveal its sweet and fruity aromas.
