The black organic PDO Nyons olive is an olive that has reached maturity, picked by hand, with an electric rake or with a vibrator and then calibrated according to its diameter which is 16 mm minimum for the table olive.

 They are then put in Brine (with salt) in order to remove all its bitterness and reveal its sweet and fruity aromas.
